CREAMED SPINACH RAW

Creamed-Spinach

MAKES 6 SERVINGS

  • 6 ounces baby spinach
  • 1 avocado, peeled and cut into large chunks
  • 1 garlic clove
  • 1 tablespoon fresh lime juice
  • 3 tablespoons cilantro
  • 6 tablespoons soy cream
  • 20 cherry tomatoes, halved
  • ¼ sweet red onion, thinly sliced
  • Real Salt to taste

 

  1. Add avocado, garlic, lemon juice, cilantro, and soy cream in blender. Blend until smooth and creamy.
  2. Toss dressing mixture with spinach in a large bowl with onions.
  3. Add tomatoes.
  4. Add Real Salt to taste.
